One of the most popular desserts during Ramadan is the sweet fried pastry known as Qatayef. Executive Sous Chef Salim Al-Ashi of the InterContinental Doha The City introduced the tasty Arabic dessert to us and how to cook it.

Qatayef – Ramadan Recipe
Ingredients:
For the dough:
- Flour – 1 kilo
- Semolina – ½ kilo
- Sugar – 3 spoons
- Baking powder – 1 spoon
- Yeast – 1 teaspoon
- Salt – ½ teaspoon
- Warm water – ½ liter
- Rose water – 1 spoon
For the stuffing:
- Walnuts
- Cinnamon powder
- Sugar syrup
Preparation:
- For the dough, mix all the ingredients together well until properly combined, then leave to rest for 30 minutes.
- Preheat a griddle or frying pan to medium high heat. Using a ladle, make a five inch pancake with the batter. Once the batter begins to bubble on top, remove the pancake from griddle and set aside. Do not flip, you are only cooking one side. Repeat with the remaining batter.
- Mix all the stuffing ingredients together to form a filling for the pancakes.
- Once the pancakes have cooled, Preheat 1 inch of oil in a frying pan to medium high heat. While the oil is heating, take one 1 tablespoon of nut filling and place it on top of the uncooked side of the pancake. Fold the pancake to make a half moon shape, and seal the edges by pressing together. Repeat until you have finished the pancakes and filling.
- Deep fry the katayef on each side until golden brown (about 15-30 second each side) then remove and drain on paper towels for the excess oil to be absorbed.
- Cover with sugar syrup and serve with pistachios on top.
